Although out of this scene for many years, no one has had a more powerful influence on what is now called Brooklyn cooking than Zak Pelaccio. His Chickenbone Cafe started the movement toward offal, elevated ethnic street food, and a rock-and-roll approach to gastronomy, coupled with the high-minded/downscale atmosphere that has become Brooklyn’s signature note.
